Commercial ghee is made by collecting cream from milk and directly clarifying it. It is fast, high-yield, and stripped of most of the nutritional goodness that makes ghee valuable. The traditional bilona method works entirely differently.
Whole A2 cow milk is first cultured into curd overnight. The curd is then hand-churned using a wooden bilona — slowly, in both directions — until the butterfat separates into soft white makkhan.
This makkhan is then gently heated on a low flame until it clarifies into pure golden ghee. This process takes three to four times longer than the cream method, but it retains the fat-soluble vitamins, natural antioxidants,
and butyric acid, which gives bilona ghee its medicinal and culinary value.
